4          medium zucchini
1          medium onion, chopped
2          tablespoons parmesan cheese, grated
1/2       cup bread crumbs
2          tablespoons fresh parsley, chopped
1/2       teaspoon salt
1/2       teaspoon black pepper, fresh ground
1/2       teaspoon marjoram
1          teaspoon olive oil
1          tablespoon liquid egg substitute

Slice the zucchini into 2 inch strips and slice in half. Scoop out the middle and arrange on a heat proof dish. Combine the egg substitute, olive oil, cheese, parsley, marjoram and seasonings together and fill the zucchini slices. Bake in the oven for 15 minutes until brown. Serve hot.
