ZUCCHINI BREAD

1          cup shredded zucchini
1          cup sugar
1/2       cup applesauce
1          teaspoon vanilla extract
1/2       cup crushed pineapple, drained
1 1/2    cups flour
1          teaspoon baking soda
1/2       teaspoon salt
1/4       teaspoon baking powder
1          teaspoon ground cinnamon
1/2       teaspoon ground nutmeg
1/2       teaspoon ground allspice
1/2       cup finely chopped English walnuts

Preheat the oven to 350 degrees F. Lightly grease a 9 X 5 loaf pan. Beat the egg whites in a bowl until stiff but not dry. Beat in the sugar, applesauce and vanilla. Stir in the zucchini and pineapple. In a separate bowl, sift the flour and salt. Add the baking powder, baking soda, ground cinnamon, nutmeg and allspice. Add to the zucchini mixture, using a few brisk movements of the spoon. Place the batter into the loaf pan and bake for 50 to 60 minutes or until a toothpick comes out clean. Let the loaf cool in the pan for 10 minutes before turning out onto a wire rack to cool completely. Serve warm or cold. Delicious for picnics.
