TURKEY BREAST IN WHITE WINE

8          turkey breast slices
12        chopped shallots
1          cup dry white wine
1/4       cups sliced mushrooms
1          clove crushed garlic
1/4       teaspoon black pepper, fresh ground
1/4       teaspoon salt

Spray a skillet with olive oil and sauté the shallots. Add the mushrooms and garlic and continue to simmer in the covered skillet. Add the wine and bring to a boil. Simmer and allow the mixture to reduce by about half. Add the sliced turkey breast and cover. Simmer for a further 5 minutes or until the turkey is cooked. Serve hot with mashed potatoes.

Notes: Excellent source of Vitamin A, B6, B12 and Niacin.
Good source of Vitamin C and Folacin.
