1          cups whole-grain wheat flour
1          cups all-purpose flour
2          teaspoons salt
1          teaspoons butter
1          teaspoon sugar
2          teaspoons yeast
1          cup water

Preheat the oven to 450 degrees F. Prepare 2 loaf pans (9 X 5) by lightly greasing with butter. Sift the flours and mix with the salt in a large bowl. Add the butter and rub into a crumb texture. Dissolve the sugar in hot water and add the yeast. Set aside until frothy (about 10 minutes). Mix the yeast into the dough until it leaves the sides of the bowl clean. Turn out onto a pastry board and knead for 10 minutes or use a dough hook with a food processor. Divide the dough into 2 pieces. With each piece, form 4 balls by pulling the dough up and round 4 corners in your hand, dusted with a little flour. Place 4 balls in each of the 2 loaf pans. Brush the top of the loaves with salt water and sprinkle with cracked wheat. Place the loaves in a plastic bag and tie loosely. Leave in a warm place until the dough rises above the tops of the pans. Bake for 30 minutes. Remove from the loaf pans and cool on a wire tray.
