VEGETARIAN TOFU

1 1/2    pounds low-fat tofu, firm
1/2       tablespoon olive oil
2          cloves crushed garlic
2          medium chopped onions
1          cup Tamari soy sauce
1/3       teaspoon fresh chopped basil
1          ounces canned tomatoes
1/2       teaspoon thyme
1/4       teaspoon marjoram
1/4       teaspoon savory
dash    Tabasco sauce
2          cups vegetable broth
2          cups cooked rice

Heat the olive oil in a non-stick skillet. Add the garlic and onions and sauté for 3-5 minutes until transparent. Add the mushrooms and cook 2 more minutes, shaking the skillet constantly. Remove the vegetables and set aside on a warm dish. Cut the tofu into 1-1 1/2" size cubes. In a mixing bowl combine the Tamari, basil, thyme, savory, marjoram and Tabasco. Dip the tofu cubes in the mixture and brown the cubes in the skillet. Add the vegetable broth to the skillet and serve hot with rice as a main dish.

Notes: Excellent source of Vitamin A and Iron.
Good source of Vitamin B6, B1, B2, Folacin, Niacin, Calcium and Zinc.
