VEGETABLE STEW

1          cups cooked brown rice
3/4       cup bulgur
2/3       cup cooked soybeans
1/2       pound sliced string beans
1          teaspoon chili powder
1/2       teaspoon hot sauce
16        ounces canned tomatoes
12        ounces canned corn, drained
1          teaspoon olive oil
1          small can green chilies, drained
1/2       teaspoon black pepper, fresh ground

Soak the soybeans overnight and discard the water. Cook the brown rice by covering with cold water and bringing to a boil. Reduce heat, cover pot and simmer for 30 minutes or until tender. Cook the bulgur wheat in a similar manner in a separate pot. Drain the cans of chilies and corn. Heat the olive oil and add rice, bulgur, and soybeans. Quickly sauté until well mixed. Add string beans, corn, tomatoes and chilies. Season with chili powder and hot sauce. Add pepper. Simmer for 15 minutes. Serve hot.

Notes: Excellent source of Vitamin C and Folacin.
