TOMATO SOUP

1 2 medium tomatoes, peeled and chopped
1 large chopped onion
3 tablespoons tomato paste
3 cups chicken broth
1 teaspoon sugar
1/2 teaspoon black pepper, fresh ground
1/2 teaspoon Tabasco sauce
1/2 teaspoon salt
1 teaspoon fresh basil
Combine the tomatoes, onion, chicken broth and tomato paste in a large saucepan. Bring to a boil, reduce the heat, cover and simmer for 15-20 minutes. Cool and blend until smooth. Return to the pan, add the seasonings and heat through. Serve garnished with finely chopped fresh tomato.
Notes: Excellent source of Vitamin C, A, Niacin and Folacin.
Good source of Vitamin B6, B2, Iron and B1.
