TERIYAKI SALMON

2 pounds salmon
1 tablespoons packed brown sugar
1/4 cup soy sauce
1 tablespoon olive oil
1 teaspoon all purpose flour
1/2 cup white wine
1 teaspoon mustard
6 slices pineapple
Combine soy sauce, brown sugar, olive oil, flour, wine and mustard in a small pan. Bring to a boil, then simmer for 3 minutes. Set aside to cool. Wipe fish and pat dry. Preheat the oven to 320 degrees F. Place the fish in the marinade and refrigerate for 15 minutes. Remove the fish from the refrigerator and place on a non-stick oiled pan. Place a slice of pineapple on each fillet. Heat the marinade and brush the fish with hot marinade. Place in the oven for 15 to 20 minutes until white color. Serve with rice as a main dish.
