1 1/2 cups bulgur
4 cups boiling water, poured over bulgur
1/4 cups soaked garbanzo beans
1 1/2 cups chopped parsley
3/4 cup chopped mint
3/4 cup chopped scallions
1/2 cup lemon juice
1 tablespoon olive oil
1 teaspoon black pepper, fresh ground
Soak beans, cook until soft and drain. Pour boiling water over the bulgur wheat and let stand for 2 hours until light and puffy. Remove excess water by placing through a strainer. Combine with the herbs, lemon juice and olive oil. Chill for 1 hour.
Notes: Excellent source of Vitamin C, A, Folacin, Niacin, Calcium and Iron.
Good source of B6, B1 and Zinc.
