3          cups whole-grain wheat flour
1          cups all-purpose flour
2          tablespoons sugar
2          teaspoons baking powder
1 1/2    teaspoons baking soda
1          teaspoon salt
2          tablespoons butter
1 1/2    cups buttermilk

Sift flour and combine with the other dry ingredients in a large bowl. Cut the butter into small pieces and crumble by lightly lifting the mixture and rubbing the butter. You may use a pastry blender. Turn onto a floured wooden board and knead a few times until smooth. Keep your hands cool as you do this. Heat the oven to 350 degrees F. Grease a baking sheet with butter and place the dough in the middle. Flatten the top a little and make a cross shaped incision in the dough. Bake for about one hour until the bread is cooked through. Test with a skewer or toothpick; if it comes out clean it is cooked. Serve hot with a main dish.
