SHRIMP IN BLACK BEAN SAUCE

1 can black beans, drained
1/2 tablespoon olive oil
2 tablespoons fresh minced ginger root
4 cloves crushed garlic
1 1/2 pounds shrimp
2 tablespoon corn starch
2 tablespoon soy sauce
4 chopped scallions
2 cups cooked rice
Heat the oil in a heavy, non-stick skillet and cook the ginger and garlic for one minute. Add the partially mashed beans, the shrimp and 1/2 cup of water. Cover and cook for 3 minutes or until shrimp is cooked. Mix the corn starch with 2 tablespoons of water and add to the pan. Mix well until the sauce thickens - about 1 to 2 minutes. Add the soy sauce and warm through. Sprinkle with the scallions and serve with the rice.
