SEA BASS WITH APPLES

4 medium sea bass steaks
2 medium red apples
2 sticks chopped celery
2 medium chopped onions
4 teaspoons chopped parsley
1 medium chopped green bell pepper
15 ounces canned tomatoes, drained
1/2 cup vegetable broth
1/4 teaspoon salt
1/4 teaspoon black pepper
pinch dill
Preheat the oven to 350 degrees F. Place the celery, onions, tomatoes and broth into a pan and cook for 5 minutes. Core and dice the apple and add to the ingredients. Add the parsley and dill and season to taste. Continue cooking a further 2 - 3 minutes or until completely cooked. Place the mixture in the bottom of an ovenproof dish with the fish steaks on top. Cover with a loose piece of aluminum foil and bake in the oven at 350 degrees F for 10 - 15 minutes until the fish is white and cooked. Garnish with parsley and lemon wedges. Serve hot with brown rice or mash potato as a main dish.
