SALMON AND SCALLOPS BROCHETTES

1 1/2 pound salmon
8 medium scallops
16 cherry tomatoes
16 mushrooms
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove crush garlic
pinch salt
pinch black pepper
Cut salmon into 1" cubes. Thread salmon, tomatoes, scallops, mushrooms onto skewers. Brush with mixture of oil, lemon juice, garlic and seasoning. Broil until the fish is cooked, for about 12 to 15 minutes, turning several times. Serve with rice as a main dish.
Notes: Excellent source of Vitamin A, C, B6, B2, B1, B12, Folacin, Niacin and Iron.
Good source of Zinc.
