BAKED SALMON

1 4 - 6 pound salmon
1 medium sliced onion
1 medium sliced carrot
4 black peppercorns
1 sprig parsley
1 bay leaf
Place the salmon on a large piece of aluminum foil in an ovenproof dish. Slice the carrot and onion and arrange on top of the fish with the peppercorns, parsley and bay leaf. Dab with butter and wrap the foil around the fish. Add the water to the base of the dish and place in a cool oven (250 degrees F) and cook for 2 to 3 hours until cooked through but not dry. Serve hot with Hollandaise Sauce, garnished with lemon wedges. Serve cold, garnished with thinly sliced cucumber, lemon slices and parsley. Cold salmon goes well with mayonnaise of a yogurt dressing.
Notes:Excellent source of Vitamin C, A, B6, B12, Calcium and Iron. Good source of Niacin.
