ROASTED TOMATO SAUCE

5          tomatoes, red ripe
12        cloves garlic
1          bunch green onions
3          tablespoons fresh basil
1          tablespoons fresh oregano
1/2       teaspoon black pepper
1/4       teaspoon salt
pinch    crushed red chili peppers

Sear tomatoes in a hot, non-stick skillet until charred. Remove tomatoes, chop coarsely and place with all of the other ingredients in the pan. Simmer 45 minutes to an hour.

Notes:Excellent source of Vitamin C.
Good source of Vitamin A, B6 and Folacin.
