1          cup rice
1 3/4    cups vegetable broth
1/2       medium onion, chopped
1/2       tablespoon extra virgin olive oil
1          teaspoon white wine

Heat the oil in a non-stick pan and sauté the onion and garlic for 3-5 minutes until transparent. Add the rice and vegetable broth and bring to a boil. Boil for a minute, then reduce the heat, cover the pan and simmer for 25 minutes or until tender. Add extra water if necessary. Serve hot.
