2          tablespoons fresh lemon juice
1          tablespoon olive oil
1          tablespoon fresh parsley
1          medium onion, chopped fine
1/4       teaspoon fresh dill

Heat a non-stick skillet and spray with olive oil. Sauté the onion for 2-3 minutes until transparent. Add the rice and dill. Cover with the water. Simmer covered for 20-30 minutes until cooked. Add the fresh lemon juice and season to taste. Serve garnished with parsley.
