PEARS IN RED WINE

4          pears
3          cups red wine
3/4       cup sugar
1/2       teaspoon cinnamon
1          cup water
2          tablespoons fresh lemon juice

Peel and core the pears. Cover with cold water and add the lemon juice to prevent them from turning brown. In a large saucepan place the red wine, sugar, cinnamon and water. Heat the mixture until the sugar is dissolved. Add the pears and simmer gently for 10 - 15 minutes until soft, turning them so they are evenly colored by the wine. Remove the pears when soft and place in a serving dish. Bring the liquid to a boil and reduce by half. Coat the pears with the sauce and serve warm.

Notes: Good source of Vitamin C.
