QUINOA-NUT VEGETABLE PILAF

1          cup quinoa, rinsed and drained
1          tablespoon olive oil
1          medium onion, chopped
1          clove crushed garlic
1          medium diced carrot
2          tablespoons almonds, toasted and chopped
2          tablespoons fresh chopped parsley

Rinse the quinoa under cold running water for 4-5 minutes to remove the grit and bitter flavorings. Heat the olive oil in a large, non-stick pan and sauté the onion and garlic for 3-5 minutes until transparent. Add the carrot and continue to cook in the covered pan for 2-3 minutes more. Add the quinoa, water and salt and boil for 2 minutes. Reduce the heat, cover the pot and simmer for 20 minutes until tender. Add the chopped, toasted almonds and mix well. Add additional water if necessary so that the pilaf is moist. Serve hot.

Notes: Excellent source of Vitamin A and Iron.
Good source of Vitamin B6, B1, B2, Folacin and Zinc.
