HERB PORK ROAST

5          pounds pork loin
3          tablespoons fresh rosemary
10        cloves garlic
1          teaspoon salt
1          tablespoon black pepper, fresh ground
1          tablespoon fresh thyme
1          tablespoon olive oil
2          sprigs fresh rosemary
2          sprigs fresh thyme

Place the fresh rosemary and thyme, black pepper, salt and olive oil in a blender and add the garlic. Place the mixture into small incisions made in the pork loin. Tie 2 fresh sprigs each of rosemary and thyme across the top of the loin. Allow to stand for 2 hours. Preheat the oven to 350 degrees F. Roast for 1 1/2 to 2 hours until the skewer comes out clear. Allow to stand for 20 minutes before slicing.
