PINEAPPLE MERINGUE PIE

1          cup pineapple chunks in light syrup
1          cup pineapple juice
1          tablespoon butter
1          tablespoon flour
1          egg yolk
1/2       cup sugar
2          egg whites

Preheat the oven to 350 degrees F. Drain the pineapple chunks and retain the light syrup. Melt the better in a saucepan and add the flour. Stir over a gentle heat for 2 - 3 minutes until a roux forms and the mixture comes away from the sides easily. Add the syrup and pineapple juice (total of one cup) and bring to a boil, stirring all the time. When the sauce is thickened, add the egg yolk and all of the pineapple chunks except one or two for decoration. Remove from the heat and pour into a greased 9" pie dish. Beat the egg whites until fluffy but not dry. Fold in the sugar and continue to beat until shiny and stiff. Spoon over the pineapple mixture and garnish with the left over pineapple chunks. Place in the oven for 3 - 4 minutes until the top has browned. Serve hot.
