NOODLES WITH TUNA

1          6 ounce can tuna in water
1          tablespoon fresh lemon juice
3/4       pound linguini
4          quarts water
1/4       teaspoon salt
1/4       teaspoon black pepper, fresh ground
1          tablespoon extra virgin olive oil

Cook the pasta for 8-9 minutes until tender. Drain well and lay in a warm serving dish. While the pasta is cooking, prepare the tuna sauce. Drain the tuna and mix with the lemon juice and olive oil. Season to taste and set on top of the linguini. Sprinkle a little grated Parmesan of Romano cheese on the top.

Notes: Excellent source of Vitamin B12, and Niacin.
Good source of Vitamin B2 and Iron.
