TINY MEATBALLS

1          cup rice, cooked
3/4       pound lamb shank, ground
1          medium onion, chopped
1/2       cup fresh parsley, chopped fine
1          teaspoon extra virgin olive oil
2          egg whites
1          teaspoon fresh thyme, chopped fine
1/2       teaspoon black pepper, fresh ground
1/4       teaspoon salt
1/2       cup flour, all-purpose

Lightly beat the egg whites with a fork and add the olive oil, rice, onion, parsley and thyme. Add the ground lamb, season with salt and pepper and combine well. Form 1 inch round or oval shapes on a floured surface and roll in flour. Heat a heavy non stick skillet and quickly brown the meatballs (2-3 minutes). Lay them in a ovenproof dish and place in a low temperature oven (200 degrees F) for 15 minutes. Serve warm with cocktail sticks and garnished with fresh parsley.

Notes: Excellent source of Vitamin B12, Niacin and Iron
Good source of Vitamin B2 and Zinc.
Larger size meatballs will need to be cooked through in a low temperature oven for 20 minutes. These can be served with a tomato sauce as a main dish.
