LEEKS A LA GRECQUE

4          medium leeks
1           tablespoon olive oil
1          cup water
1          tablespoon tomato paste
1          teaspoon sugar
1/2       cup rice
12        small black olives
1          tablespoon parsley
1          teaspoon lemon juice
3          slices lemon

Wash and slice leeks into 1 1/2" pieces. Steam for 5-6 minutes until cooked. Cool. Boil water, oil, tomato paste and sugar in a large pan and simmer for 5 minutes. Add rice, cover the pot and simmer for 8 minutes or until the liquid is completely absorbed by the rice. Turn off the heat and leave the pan covered for 10 minutes. Add lemon juice and arrange with leeks on a serving dish. Garnish with olives, parsley and lemon slices.

Notes: Excellent source of Vitamin C, B6, B1, Folacin and Iron.
Good source of Niacin and Calcium.
