RACK OF LAMB WITH HERBS

2 1/2    pounds lamb cutlets
2          cloves garlic, peeled and sliced
2          tablespoons fresh herbs
1          teaspoon sea salt
1/4       teaspoon black pepper, fresh ground

Preheat the oven to 450 degrees F. Remove excess fat from the lamb. With a knife make small incisions into the lamb and insert slices of garlic to infuse flavor. Combine the fresh herbs (oregano, thyme, marjoram and sage are good) and rub onto the lamb. Place the rack on a roasting pan with the fat side up. Place in the oven and immediately reduce the heat to 400 degrees F. Bake for 20-25 minutes depending on how well done desired. Remove from the oven, loosely cover with aluminum foil and allow the meat to rest before serving. The butcher can arrange the cutlets in a circle like a crown and partially cut the ribs through. Paper covers may also be placed on the ends of each rib as a garnish before serving.
