KEY LIME PIE

1          cup Graham cracker crumbs
2          tablespoons unsalted butter
1          tablespoon water
1          envelope gelatin powder, unsweetened
6          tablespoons fresh lime juice
1/2       cup sugar
1/2       teaspoon vanilla extract
2          cups nonfat yogurt
1          tablespoon lime rind, grated

Mix the Graham cracker crumbs with the butter and line an 8" baking pan. Dissolve the gelatin powder in the water and add the lime juice and sugar. Heat in a small saucepan until the sugar is dissolved. Allow to cool and add the yogurt and lime rind. When beginning to thicken, place on top of the crumbs and leave to set. Garnish with sugared lemon rind. Serve chilled.

Notes: Good source of Vitamin C, B2 and Calcium.
