GREEN TOMATO RELISH

1 2        green tomatoes
9          medium onions
1/3       cup salt
4          green bell peppers, seeded and chopped
4          red bell peppers, seeded and chopped
4          gherkins
1          tablespoon celery seed
4          cups sugar
1          quart vinegar

Chop the onions and the tomatoes and mix together. This may be done in a blender or food processor. Add the salt, cover with the water and set aside for 10 minutes to draw the fluids out of the vegetables. Drain and place in a large saucepan. Add the bell peppers, chili peppers, gherkins (canned or bottled pickles may be used), celery seed, sugar and vinegar. Bring to boil and simmer for 15 minutes. Place in pickle jars and seal while still hot.

Notes: Excellent source of Vitamin C, A and B6.
Good source of Folacin.
