GLAZED CARROTS

5          medium carrots
1/2       tablespoon butter
1/2       tablespoon fresh lemon juice
1          tablespoon fresh parsley, finely chopped

Peel and julienne carrots into 1/4" strips. Place them in a medium saucepan and cover with cold water. Bring to a boil and boil gently for 10-12 minutes or until tender. Drain and set aside in a warm place. In the same pan, melt butter and add lemon juice. Add carrots and toss for 1-2 minutes until well glazed. Serve hot, garnished with fresh chopped parsley.

Notes: Excellent source of Vitamin A.
Good source of Vitamin C.
