1 clove crushed garlic
6 cups canned chopped tomatoes
1 medium chopped onion
1/2 cup chopped green pepper
1/2 cup chopped cucumber
1/4 cup finely ground bread crumbs
2 cup tomato juice
1/2 teaspoon cumin
1/2 teaspoon black pepper, fresh ground
1/2 teaspoons salt
1 tablespoon extra virgin olive oil
1/4 cup fresh lemon juice
Blend the tomatoes, garlic, onion and green pepper in a blender. Add the cucumber and strain into a serving bowl containing the bread crumbs. Mix well and chill for 30 minutes in the refrigerator. Before serving, blend the olive oil, lemon juice, salt, pepper, cumin and tomato juice. Stir into the mixture and serve garnished with small dishes of diced tomatoes, cucumber and green pepper.
Notes: Excellent source of Vitamin C, A, B6 and Folacin.
