GARLIC MASHED POTATOES

4          peeled potatoes
1/2       cup skim milk
3          cloves crushed garlic
1          teaspoon butter
1/4       teaspoon sea salt
1/4       teaspoon black pepper, fresh ground

Heat the oven to 425 degrees F. Wrap the garlic cloves in aluminum foil and bake for 20 minutes or place in microwave for 45 seconds. Unwrap and cool. Slice the potatoes evenly and place in a saucepan. Cover with cold water and bring to a boil. Simmer for 5-8 minutes until soft. Drain and mash until smooth. Cut the base from the garlic cloves and squeeze pulp into mashed potatoes. Warm milk and add to potatoes with butter and seasonings. Serve hot or cold.

Notes: Excellent source of Vitamin C.
Good source of Vitamin B6 and Niacin.
