FRITTATA WITH SPINACH

2          eggs
2          egg whites
1/2       teaspoon salt
1          clove crushed garlic
1          teaspoon paprika
1/4       teaspoon red pepper flakes (optional)
1/2       tablespoon olive oil
1/2       cup grated Parmesan cheese
1          pound spinach leaves, chopped fine

Preheat the oven to 350 degrees F. Place the washed spinach in a large saucepan and cook covered for 3-4 minutes, shaking frequently. Drain well. Beat the eggs together (or use 1 1/2 cups liquid egg substitute) and add half of the eggs to the chopped spinach. Mix in 1/4 cup of the grated Parmesan. Prepare an 8" round ovenproof dish by lightly brushing with oil. Pour the egg and spinach mixture into the dish and sprinkle with the red pepper flakes. Pour the rest of the egg mixture over this and sprinkle with the rest of the Parmesan and paprika. Bake for 45 minutes and serve hot with a green salad as a main dish.

Notes: Excellent source of Vitamin C, A, Folacin, Calcium and Iron.
