FRESH FRUIT SALAD

1 apple, peeled and chopped
8 small seedless grapes, peeled
1 mandarin oranges in light syrup
1 plum, pitted and chopped
1 nectarine, pitted and chopped
1/2 banana, peeled and sliced
1 pear, peeled and chopped
2 tablespoons fresh lemon juice
Combine all of the ingredients in a mixing bowl. Chill in the refrigerator for at least one hour. Transfer to individual dessert dishes and serve garnished with tiny sprigs of mint or borage.
Notes: Excellent source of Vitamin C, A, B6 and Iron. Good source of Vitamin B1, B2 and Folacin.
Refrigerate for at least 2 hours for easier cutting.
