FLAGEOLETS (Small French Green Beans)

2          cups flageolets, soaked
4          cups water
1          tablespoon olive oil
1          medium onion chopped
2          cloves garlic, crushed
1/2       teaspoon salt
1/2       teaspoon black pepper
1          tablespoon parsley, chopped

Soak flageolets overnight. Drain and rinse. Heat the water in a pot. Heat the olive oil in a large skillet. Sauté the onion and garlic until lightly browned and soft (about 5 minutes). Stir in the drained flageolets and heat for 3 minutes over a low flame. Add the hot water and cover the pan. Simmer for one hour. Add extra water if necessary. Adjust seasoning and serve sprinkled with fresh, chopped parsley.

Notes: Excellent source of Vitamin B1, Folacin, Iron and Zinc.
Good source of Vitamin B6 and Calcium.
