SEAFOOD CREPES FILLING (PART 3 OF 3)

1 /2 pound halibut fillet
1/4 pound shrimp
1/4 pound crabmeat
1 tablespoon shallots
1 teaspoon crushed garlic
1 tablespoon diced onion
1 tablespoon chopped tarragon
1 tablespoon chives
6 ounces watercress
3 egg whites
pinch nutmeg
1/4 teaspoon white pepper
1/4 pinch salt
3 ounces mozzarella cheese, part skim milk
Preheat oven to 300 degrees F. Place halibut, shrimp and crab meat together with shallots, garlic, onion, herbs, spices and seasoning into a blender. Add egg whites and chop coarsely, using the pulse setting control. Steam the kale and watercress for 1 - 2 minutes and add to the seafood mixture. Oil a glass baking dish and add the mixture to it and bake for 20 minutes. Remove from the oven and chop lightly. Mix with the mozzarella cheese and fill crepes. Place in a baking dish, cover and bake at 325 degrees F for 20 - 30 minutes until cooked through. Remove and place each crepe on a plate and top with Roasted Tomato Sauce. Serve with a green salad as a main dish.
