CURRANT SCONES

1 1/2    cups flour, all-purpose
1/2       teaspoons baking soda
1/2       teaspoon cream of tartar
pinch    salt
1          tablespoon sugar
2          tablespoons butter
1/2       cup buttermilk
2          tablespoons golden seedless raisins

Preheat the oven to 375 degrees F. Cut the butter into small pieces and add to the sifted flour, baking soda and cream of tartar (or one teaspoon baking powder). Add the sugar and combine with a food processor or by lightly rubbing with your hands until it is bread crumb consistency. Add the raisins. Add sufficient buttermilk to make a soft, elastic dough. Turn onto a floured pastry board, knead lightly and roll out to about 1/4" thickness. Cut in circles and place on a greased and flour-dusted baking tray. Also dust the top of the scones with a little flour. Bake for 25 - 30 minutes. Cool on a wire rack and serve warm or cold with tea or coffee.

Notes:Good source of Vitamin B1.
Variation: A beaten egg may be added to the milk to make a richer recipe.
