WARM CORIANDER SAUCE

1          tablespoon olive oil
1/4       cup tomato juice
1/2       teaspoon paprika
1/4       teaspoon cayenne
1          teaspoon ground cumin
2          cloves crushed garlic
1/4       cup lemon juice
1/4       cup chopped parsley
1/4       cup chopped coriander (cilantro) leaves

Combine all ingredients together and refrigerate for 1 hour. Warm slightly. Serve spooned over broiled fish.

Good source of Vitamin A and Iron.
