CITRUS SALAD

6          oranges
2          grapefruit
2          heads radicchio
2          tablespoon fresh orange juice
2          teaspoon Balsamic vinegar
pinch    salt
pinch    white pepper
1          tablespoon extra virgin olive oil

Peel and section the oranges and grapefruit by cutting into the center to make wedges and removing the thick section walls. Arrange the sections alternately on top of a bed of radicchio leaves. Combine the orange juice, Balsamic vinegar, salt, pepper and olive oil and pour over the salad just prior to serving.

Notes: Excellent source of Vitamin C.
Good source of B1 and Calcium.
