CHOCOLATE CHIP COOKIES

2          cups flour, all-purpose
1          teaspoon baking powder
1          teaspoon salt
8          ounces chocolate chips
1          teaspoon vanilla extract
1/2       cup egg substitute, liquid
3/4       cup apple sauce, unsweetened
1/2       cup brown sugar, packed

Preheat the oven to 375 degrees F. Combine the apple sauce and sugar until light and fluffy. Add the vanilla extract and the beaten egg substitute (or 2 whole eggs). In a separate bowl, sift the flour and salt, add the baking powder and lightly blend into the apple sauce and egg mixture. Stir in the chocolate chips. Place rounded teaspoonfuls of the batter onto a baking sheet and bake for 8 to 10 minutes. Cool on a wire rack and serve warm.

Variations:
1/2 cup of chopped pecans or English walnuts.
1/2 cup of white chocolate chips.
