CHEF'S SALAD

1          head dark green lettuce
1/4       pound cooked white chicken meat
1/4       pound low fat ham
1/4       pound low fat Swiss cheese
2          hard boiled eggs
4          red ripe medium tomatoes
1          cup watercress
1          tablespoon olive oil
2          teaspoon Balsamic vinegar

Chop the washed lettuce and place in the bottom of a salad bowl. Add the chicken, ham and cheese. Garnish with wedges of egg, tomatoes and sprigs of watercress. Serve chilled, dressed with the oil and vinegar and seasoned to taste.
