1          pound halibut
1/2       cup fresh lemon juice
2          medium tomatoes
1          small green bell pepper
2          tablespoons extra virgin olive oil
4          tablespoons fresh parsley
1          tablespoon white wine vinegar
dash    Tabasco sauce
1/2       teaspoon oregano
1/2       teaspoon salt
1/4       teaspoon pepper

Dice the fish. Place in a glass bowl and cover with lemon juice. Refrigerate the marinated fish for at least 2 hours, turning the fish occasionally. Peel, remove the seeds and dice the tomatoes and add to the fish. Remove the seeds from the green bell pepper and dice. Add to the fish with the olive oil, parsley, vinegar, Tabasco, oregano, salt and pepper. Serve chilled garnished with olives and sprigs of parsley.

Notes: Excellent source of Vitamin C, A, B6, B12, Niacin and Iron.
