RICE AND CELERY SOUP

6          sticks celery, finely chopped
1          cup rice
2          crumbled chicken bouillon cubes,
6          cups water
1/2       medium chopped onion
14        ounces canned chopped tomatoes
1          tablespoon extra virgin olive oil
1/2       teaspoon salt
1/3       cup fresh parsley, finely chopped
1/2       teaspoon black pepper, fresh ground

Dissolve the chicken bouillon cubes in water and heat in a saucepan. In a skillet, heat the oil and sauté the onion and garlic for 3-4 minutes. Add the celery, tomatoes, salt and pepper. Cook on low heat, stirring frequently for 10-15 minutes. Add the rice and continue heating for 20 minutes or until the rice is cooked. Remove from heat, add the fresh parsley and serve.


Notes: Excellent source of Vitamin C.
