2          tablespoons unsalted butter
1 1/2    cups sugar
1          cup egg substitute, liquid
2          cups four
2          teaspoons baking soda
2          teaspoons ground cinnamon
1/2       teaspoons ground allspice
1/4       teaspoons ground nutmeg
1/4       teaspoons ground cloves
4          large carrots finely grated
1          cup English walnuts chopped
1/2       cup golden raisins

Preheat the oven to 350 degrees F. Combine the butter and sugar in a mixing bowl and beat until light and fluffy. Add the egg substitute and continue to beat. Fold in the sifted flour, baking soda, ground cinnamon, allspice, nutmeg and cloves into the mixture. Stir in the grated carrots, English walnuts and golden raisins. Adjust the consistency by adding a little water or skim milk if necessary so that the batter drops off the spoon to the count of 3. Spread the batter into a 9" baking pan and bake for 55 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve with optional cream cheese topping.
