Chicken Cacciatore

4          boneless skinless chicken breast halves
1/2       tablespoon olive oil
2          medium onions, sliced 1/4" thick
2          cloves crushed garlic
14        ounces canned tomatoes
8          ounces tomato paste
1/2       teaspoon salt
1/4       teaspoon black pepper, fresh ground
1          teaspoon fresh chopped oregano
1          teaspoon fresh thyme
1/4       teaspoon celery seed
1          bay leaf
1/2       cup white wine

Heat the oil in a large non-stick heavy skillet. Sauté the onion and garlic for 3-4 minutes, remove and set aside. Dust the chicken breast in flour and brown for 5-6 minutes. Return the onion and garlic to the skillet. Mix the rest of the ingredients except the wine together in a mixing bowl and add to the skillet. Cover and simmer for 30 minutes. Add the wine and cook uncovered for 15 minutes. Remove the bay leaf and any excess fat. Serve with mashed potato or pasta as a main dish.
