1 /2       cup skinless light chicken meat, cubed
1          tablespoon low-fat mayonnaise
1/2       teaspoon chopped celery
1          small tomato
2          slices whole grain bread

Combine the chicken with mayonnaise and celery and place between two slices of bread. Cut in half and serve on a plate, garnished with quartered tomato and sprig of parsley.
