BEEF BOURGUIGNON

2          pounds lean beef, cubed in 1" pieces
5          medium sliced onions
1          cup beef broth
1          leek, sliced 1/4" thick
1          carrot, sliced 1/4" thick
1          cup red wine
1/2       tablespoon olive oil
1          teaspoon fresh thyme
1          teaspoon fresh marjoram
1/2       teaspoon fresh ground black pepper
1/2       pound sliced mushrooms
1          tablespoon flour

Preheat oven to 300 degrees F. Heat olive oil in a heavy non-stick skillet. Sauté onions and remove. Place beef cubes in a plastic bag with seasoned flour and brown in the pan. Remove and place in a casserole dish. Add the vegetables to the skillet and stir fry for 3-4 minutes. Transfer to the casserole dish and add the wine and broth. Cover and cook in a slow oven for 1 1/2 > to 2 hours. Serve with rice or mashed potatoes.

Notes: Excellent source of Vitamin B6, B12, B2, Folacin, Niacin, Zinc and Iron.
Good source of Vitamin B1.
