BEAN, NOODLE AND NUT CASSEROLE

1 2        ounces noodles
1          pound black-eyed peas
1/2       tablespoon olive oil
4          medium onions
4          ounces cashews
4          ounces peanuts

Wash black-eyed peas. Boil 4 cups of water and drop the black-eyed peas in. Boil for 2 minutes. Set aside to soak for one hour. Cook noodles according to package instructions. Melt butter and sauté onions until clear and soft. Toss nuts with onions in the frying pan until browned lightly. Drain black-eyed peas and cover with 4 cups of cold water. Bring back to a boil and simmer for 30 minutes or until tender. Combine drained noodles, black-eyed peas, onions and nuts in a casserole dish. Cover and heat for 20 minutes in a 350 degree oven Serve with tomato sauce and a fresh salad.

Notes: Excellent source of Vitamin B6, B12, B1, B2, Folacin, Niacin, Iron and Zinc.
Good source of Calcium.
