BANANA BREAD

2          medium bananas
3          egg whites
2          tablespoons canola oil
1/2       teaspoon ground cinnamon
1/2       teaspoon ground nutmeg
1          tablespoon honey
1 1/2    cups flour
2          teaspoons baking powder
1/2       teaspoon salt

Preheat the oven to 350 degrees F. Lightly grease a 9 X 5 loaf pan. Beat the egg whites until fluffy, but not dry. Mash the bananas with the honey and canola oil and fold into the egg whites. In another bowl, sift the flour and salt. Add the baking powder, ground cinnamon and nutmeg. Combine with the banana mixture using light, firm strokes. Place the batter into the loaf pan and bake for 50 to 60 minutes or until a toothpick comes out clean. Cool for 120 minutes before turning out. Slice and serve warm or cold.

Notes: Good source of Vitamin B1.
Variations: Add 8 apricot halves, finely chopped OR 1/2 cups
golden raisins Or 1/3 cup pecans or English walnuts, chopped.
