MEATBALLS

3/4       pound ground extra lean lamb
3/4       cup cooked rice
1          medium chopped onion
2          tablespoons finely chopped parsley
1          teaspoon marjoram
1/2       teaspoon black pepper
1/4       teaspoon salt
2          egg whites
1          teaspoon extra virgin olive oil
1/2       cup flour

Preheat the oven to 200 degrees F. Combine the rice, onion, parsley, thyme, marjoram and lightly beaten egg whites together in a large bowl. Add the ground lamb and mix evenly. Form 2" sized meat balls and roll them in the flour. Heat a large non- stick skillet and lightly spray with olive oil. Brown the meatballs on a medium high heat and then place them in an ovenproof dish. Cook for 20 minutes and serve hot with a tomato or brown sauce. Serve garnished with parsley.
