APRICOT ALMOND SQUARES

1 cups dried apricot halves
1/2 cups almonds, dry-roasted, ground
2 tablespoons butter
1/4 cup of oatmeal
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon salt
1 cup flour
1/2 cup egg substitute, liquid
1 cup firmly packed light brown sugar
1/2 teaspoon baking powder
1 tablespoon confectioner's sugar
Preheat the oven to 350 degrees F. Place apricots in a pan
of cold water and bring to a boil. Cover and simmer for 6-8
minutes. Drain and pat dry. Slice thinly, cover and set
aside. Blend the butter and oatmeal with 2 tablespoons
water. Mix in 1/2 of the flour and the ground almonds with a
metal spoon. Spread over the bottom of a 9" baking pan. Bake
for 20 minutes. While the pastry is baking, sift the rest of
the flour with the baking powder and salt. Lightly beat the
egg substitute with the brown sugar and blend in the flour
mixture. Add the vanilla and almond extracts and stir in the
apricots. Spread over the pastry. Bake for 30 minutes until
brown. Cool and sift confectioner's sugar over the squares
before serving.
